Here’s how it’s made: After roasting or searing a piece of meat, there’d be brown bits at the bottom of the pan. The caramelized, umami aromas in this layer of pan gold, often referred to as fond, are challenging to replicate. Add wine, garlic, and chicken stock to the pan to pull them off and create the sauce. The browned parts can be scraped up by stirring with a wooden spoon. To quickly emulsify (i.e., prevent fat and other liquids from separating) your sauce before serving, add butter, mustard, or sour cream. This will give your sauce the ideal amount of lusciousness.
